Finding wild ingredients that can be transformed into teas, cocktails, condiments or even whole meals, Luke teaches how to discover, identify and cook edible goods from the estate. Foraged berries, herbs, mushrooms and edible plants are on the menu in some of Scotland’s most innovative restaurants and can also be foraged and served right here at Gilmerton.
